The combination of food and drink pairing is not a new revelation to those familiar with the benefits each one has on the other. Yet the reintroduction of a whole course altogether is something to be lauded. Bring forward the ‘Savoury Course’, rediscovered by cheese artisan Alex James and elevated through the distinctive notes of Beefeater’s Burrough’s Reserve Edition 2 by Master Distiller Desmond Payne.

Like the first edition, Edition 2 is a drink for those who are looking for something new, something rare and hard to find.

 

Yet while the origins of this course lies within the 19th century, in our conversation with Desmond he highlights that the forward thinking nature of Gin making is what makes this collaboration authentic.

AE: How would you say science has an impact on the curation of Beefeater Burrough’s Reserve Edition 2?

DP: A lot of the newer gins are different but what we do at Beefeater is add all of our botanicals and leave them to develop for 24hours. Our botanicals are a family and like most families they get on. I am not a scientist which is why I believe that gin making is an art but I believe that science is there to support our artistic ambitions – in other words science is great at analysis.

 


 

EDITION 2 FLAVOUR PROFILE

Beefeater Burrough's Reserve Edition 2.0

Nose: Soft, oak spice, balanced by the sweet, fresh aroma of juniper and citrus.
Palate: Rich, juniper-led spice develops into the softer notes of oak, showing a hint of dried fruit and liquorice on the finish.
Finish: Long and complex, with flavours that continue to evolve on the palate.

 


 

AE: How would you say this relates to the introduction of the savoury course?

DP: It is just something that works. You wait for inspiration sometimes but when I thought about Edition 2 I decided I wanted a sipping gin. Something that worked after dinner in the same way whisky does and I think the savoury course really elevates some of the flavours. I am not sure why it works I just know that it works.
